Tomato Soup
2 medium-sized tomatoes
1 small onion, finely chopped
1 garlic clove, minced
1/2-inch piece of ginger, grated
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
1 tablespoon oil or ghee (clarified butter)
Salt to taste
Fresh cilantro leaves for garnish
Instructions:
Heat oil or ghee in a saucepan over medium heat.
Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they turn translucent.
Add minced garlic and grated ginger. Cook for another minute until the raw smell disappears.
Chop the tomatoes and add them to the pan. Cook for a few minutes until the tomatoes soften.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well to combine all the ingredients.
Reduce the heat to low, cover the saucepan, and let the soup simmer for about 10-15 minutes, allowing the flavors to meld together.
After the soup has simmered, turn off the heat and let it cool slightly.
Using an immersion blender or a regular blender, blend the soup until smooth. If using a regular blender, be careful as the soup will be hot.
Pour the soup back into the saucepan and reheat it if necessary.
Taste and adjust the seasoning if needed.
Serve the hot tomato soup in a bowl, garnished with fresh cilantro leaves.
