Ingredients:

4 cups vegetable broth

2 cups water

1 tablespoon oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1-inch piece of ginger, grated

1 green chili , finely chopped

1 medium carrot,

1/2 cup cabbage, thinly sliced

1/2 cup bell peppers, thinly sliced

1/2 cup green beans, thinly sliced

1 cup cooked noodles (any variety of your choice)

2 tablespoons soy sauce

1 tablespoon vinegar

Salt to taste

Black pepper to taste

Fresh coriander leaves for garnish

 

Instructions:

 

Heat oil in a large Tawa . Add the sliced onions and stir until they become translucent.

 

Add minced garlic, grated ginger, and green chili pepper . Sauté for another 1-3 minutes.

 

Add carrots, thinly sliced cabbage, bell peppers, and green beans to the Tawa.

 

Cook for about 3-4 minutes till the vegetables soften.

 

Pour in the vegetable broth and water. Bring the mixture to a boil and after this let it simmer for about 10 minutes until the vegetables are tender.

 

Stir in the soy sauce and vinegar and add salt and black pepper to taste.

 

Add the cooked noodles stir well to combine. Cook for an additional 2-3 minutes to heat the noodles through.

Remove the soup from heat and let it cool slightly and then Fresh coriander leaves for garnish
